I've built and deployed cronolog 1.62, a utility that permits apache to automatically rotate logs and timestamp the filenames as desired (one per virtual host). It's a lot better, IMHO, than using logrotate or some cron job as there's no way a log file can get corrupted by a hit happening right during a log rotation.
